best ways to cook crappie

alright lets hear your best crappie recipe's.. i have a new way i am going to try today where you roll fillets in mustard before breading...has anyone ever tried this???

Step #1- wash well and let dry.
Step #2- shake in seasoned corn meal with just a tad of flour.
Step #3 dip in mixture of butttermilk and beaten eggs. Then back in the corn meal. Shake off the excess meal.
Step #4 drop in vegetable oil at 375 degrees until golden brown and floating.
Step #5- call me when you have a platter full.

Do frog legs exactly the same way except go with flour instead of corn mean.

I dip mine in egg 'n' buttermilk mix.
Drop in baggie with mix of 1/2 flour, 1/2 pancake mix (I don't like corn meal), and shake well.
Pan fry with butter till brown.

soak in beer for 30 minutes before dusting good with flour,shake lemon pepper on as your cooking or just as soon as you pull it out of the skillet,mike243

we cut our legs in half, pull out the little grissle thingy, soak in salt water for minimum 12 hours, the gals seem to like the single leg better than a pair

opps didnt see that BW had the buttermilk in there. same thing. Serve with hush puppies and frozen fries and slaw...add salt to fries after they come out of oil and are still hot. Sweet tea to drink, sometimes some vodka in it.

Mines the same as bowriter except I add hot sauce to the egg wash and I throw a little cajun spice in with the corn meal and maybe a pinch of cyanne pepper.

we cut our own fries using unwashed unpeeled red potatoes, leave them in the pot[peanut oil] until they are crispy on the outside, plenty of salt while still hot, this helps to lower our colesterol

Best fish I ever had, was crappie fillets marinated in zesty
italian dressing overnight and then cooked over charcoal. They
were only cooked about 2 minutes on each side over the hot coals.

No, the grate was well oiled with olive oil. If you cook them
quickly, they don't have time to "stick". Also, the Italian
dressing contains a good bit of oil too.
