Looks like tongue ,btw I seen some beef tongue at wally world ,was like 15 dollars,blowed my mine it was that high,anyway I have no idea what ur making let us know.

I got me one of those Pirantas just before season and I am hoping to bloody it up today. It is a sweet set up! Thanks for the suggestion. And those deer tongues are going to shrivel up into little sticks in the curing phase. Keep us posted

Venison tongues, actually. I packed them in salt with cloves, juniper, cinnamon and nutmeg. After the salting stage, I'm gonna hang them up and see what happens. I've never heard if cured tongue, so I'm real curious what it's going to be like.

Hopefully, it'll improve the texture :D
