We used grouper . Flat out OUTSTANDING! Better than any fish recipe I've had in a restaurant!!! Fast and easy

Trust a fat man! We made it two nights in a row!!!! You could throw it over pasta and it would be outrageous!

Word of note . I overdid it on the ZEST of a lemon ( I zested the entire lemon and used the whole amount of juice) good but too much. Maybe go HALF OF LEMON to zest, and half the juice.

Grouper was great. COD, halibut, sound good. Going to try redfish next.

That looks awesome! I'll bet it'd be great with chicken breast too.
 
Use the same ingredients and bake in the oven for about 15 minutes until the meat is white and flaky. Mmm-mmm-good stuff.

This was a little too acidic for my taste to use with a fish as lean and dry as striper. It's a fish that isn't my favorite to cook with so I don't keep many of them. Probably would be great with catfish but I'd still back off the lemon juice a little.

Also, the squash donated a lot of excess water that has to be cooked off. Like always, leftovers were better. Seems like a lot of that moisture was taken up overnight.
