Between the lights over the island. I can see what I think is another light. But what is it? looks like horses running? Intriguing

That's great! That's what I did 2 years ago when trying to figure out what to do with 109 tomatoes. Do you have the recipe you used?
Been making this recipe pretty much annually since 1982. Friend of mine shared it with me, came from his family in TX & they had made it for decades. Enjoy!

10lbs tomatoes makes 6-7 quarts
1 jar diced jalapenos
1/2 jar minced garlic
4-5 med bell peppers ( Cajun style for more heat)
2- 15oz cans tomato sauce + 1- 8 oz can
5 med onions chopped
1 bunch green onions chopped
1/2 bunch parsley chopped
1/2 bunch cilantro chopped
10-12 shakes hot sauce
1/4 cup lime juice
1 cup white vinegar
1/2 cup sugar
3 1/2 Tbsp salt

Simmer for 15-20 minutes in pot.
Pour into jars & place in canner for 15 minutes
