Anyone ever use one of these? Thinking of getting one. Do they hold hear well or should I get a offset smoker?

They work great. Check out the bbq brethren site for tips and posts by other WSM users. You can even hook up a digital controller on them to keep the temp perfect.

It's the original smoker. It'll definitely do it. I don't know many people that use them off the top of my head, but my mom does. She has a tendency to smoke the crap out of her ribs, and they end up tasting acrid. I'd dial the smoking back on this one, since you're hanging the meat directly over the heat source.

Then again, maybe mom just doesn't know how to smoke meat.
