One of the best dinners was a venison roast that had been marinaded in white wine for three days. Slow roasted. So tender you could cut it with the spoon handle.

When I was young we were allowed 1 deer. That's why we didn't waste anything we always kept the heart and liver. Somewhere along the years I started leaving the heart and liver in the woods, you know coyotes got to eat.

That looks really good! I plan on trying the heart on the next deer I shoot.
Well, I shot one 3 days after this post but blew her heart to where it was unrecognizable. Did the same exact thing a week later on the next deer I shot. I need to aim a little higher up LOL

Hmmm, looks great. I always take the heart when possible, but until a few years ago I didn't know how to cook it properly, it has to be cooked quickly, left medium rare. Once I discovered that, it became one of my favorite dishes.

I started shooting in the neck to save the heart
