A couple of ways...boiling takes 3 to 5 hours, pressure cooker a lot faster, or you can smoke them, wrap in foil and slow cook for several hours. Basically you want them cooked till the meat falls off the bone. Otherwise it's very tough. When boiling, I add carrots, onions, celery, salt and pepper to the water. And save the water, it's a great broth for soup or whatever.
Once they are cooked, you pick up the leg bone and meat starts to fall off, you know it's ready. Pull it like pork, be sure to remove the spindles from the drumsticks. Toss in a skillet with BBQ sauce, it makes some great sandwiches.
Turkeys are delicious all around, just takes extra work for the tough parts.
