Sell me a recipe that makes it worth getting me one. I got a line on a good one but don't know if it's worth the trouble

Man that is an awesome recipe and a helluva bucket list item. I don't know if I've ever seen a 150# snapper. The one I found was laying eggs and wasn't big enough so I let her go. I am now on the lookout for the big one.

This one is easy if you want plain and simple. Just put the pieces in a bowl of buttermilk overnight in the fridge, bread it and deep fry it. Good stuff but nothing nastier to clean!

Yeah, Escoffie recipes are way over the top. He was a chef for European aristocrats back when folks ate turtles are carp as fine dining. Obviously, you would need to adjust the recipe for size.... 50 qt Stock pot? That won't fit under my stove hood

That 50qt stock pot wouldnt fit on my stove either but it would fit on my outdoor woodfire cookpit and that would be badass

I agree on the nasty. Me and a buddy tried to clean one. It got so nasty I just threw it out.
