Smoking baloney

Mixed up 14 lbs of baloney using Cabelas seasonings.
Put it on the smoker about 11:30am

Been on smoker for almost 3.5hrs and it is just now getting warm. Guess I should have taken it out of the fridge sooner. Doh!

Kicking the smoker up to high and going to try and get this puppy done so it doesn't hover in the danger zone long.

Note: fried up a little as a taste test and I think the prepared mixes are too salty.

Yeah it a good thing to get it room temp before putting on the smoker. It will shock the smoker temp. and take longer to cook.

Gonna do a batch myself this week along with some vension summer sausage.

Bologna came out fine. Smoker does not heat uniformly. The ends on one side got a little over done but it was tasty!

nothing cold about it.just came off the smoker.the only thing cold was the beer. :grin:

you done got em to thankin....tomorrow evening im gonna drink cold beers and fire up the grill for some thick sliced bbq bologna with slaw/mustard/jalapenos etc on buns along with some chips and dip or french fries....aint realy healthy but its tasty as all get out....lol

just got done....wooo!!!!!.....had 4 racks of ribs.....a stick of bologna and slaw and baked beans and rolls and jalapenos stuffed with cream cheese and wrapped with bacon and some cold beers and a 4 wheeler ride.

best stuff i ever eat!!!!
