Anyone have a good recipe for smoking a turkey that you wouldn't mind sharing? I have a gas smoker and have just never got it figured out. I've tried a couple of times, but just can't get it figured out: they either get too tough and dry or they end up not completely cooked 'down deep'.
 
Following.....I'm going to try smoking just one side of the breast.
I've had good luck smoking "store bought" turkey breast but never tried wild turkey.
I do know the secret to keep meat from drying out is to keep the water pan full. I use either vinegar or cheap beer mixed with water in mine.
 
It's tough to do, but it also seems to hold its moisture better than domestic turkey.
Like others have said, I just keep the water pan full. Use basic salt and pepper.
Smoke 8-10 hours or so on about 220-225.

Im no expert. Wanting to see what others do.
