All the wild boar I have eaten has tasted like pork out of the grocery except a little leaner. A big boar will be tough. That's right, I said tough. BBQ is good but it makes wonderful stew meat as well. If you cut the loin into steaks, pound them with a mallet to break it down and cook anyway you would a pork chop or pork steak. Chicken fried pork steaks with sawmill gravy and mash tators sure is good.
Usually only "drop" boar hogs on their sides long enough to jerk their cods out :grin: They will eat better when they are barrs, but are still plenty good if not cut. If I have one die on me that's not cut, I turn them into some fine sausage. If it wasn't for wild hogs, my ancestors would have starved to death.
