Can't really find a clear answer to my question in the hunting guide. Is it legal in TN to quarter in the field and if so what identifying parts of the animal must come out with the meat? Is the head considered evidence of sex or must the sex organs remain attached to the hind quarters?

Evidence of the animal's sex, species and antlered status (if applicable) must remain with the animal while a field and until checked in
 
For a deer, the head would be the key since the bag limits go by antlered and antlerless. An antlered doe counts against the two antlered bag limit. However, the regulation also requires proof of sex for the deer.

For a bear, the sex organs need to be attached to be legal.
