Osage Orange - when to cut for bow staves?

I am thinking of trying my hand at make a bow with osage orange wood. Lots of trees on the farm and I have my eye on a nice, straight, limb free piece.
Is it better to wait for winter, when all the sap is down, or go ahead and cut now?
 
Cut them any time you want. I've seen em full of milky sap even in winter, and never had a problem. Just split em and get the ends sealed good and stack em off the ground out of the weather for a year or two.
