Came across this recipe...I'm not a big fan of oregano - but I'm gonna try this. It's supposedly good for grilled veggies, in potato salad, and as a salad dressing.
Could also be used to marinate meat too.
3 tablespoons dried oregano
1/2 cup red wine vinegar
3 cloves garlic - minced
1-1/4 cups extra-virgin olive oil
Salt and Freshly ground black pepper.
Toast the oregano in a dry skillet over low heat for around two minutes to release the oils.
Whisk all the ingredients together in a bowl - if ya got time, warm the dressing over low heat for around 5-10 minutes, this will intensify the flavors.
