If it has skin on, use lemon pepper season on the side with out skin.. put on medium hot grill. When you can lift the meat off the skin pull and enjoy Should not take but around 5 minutes

Vacuum seal it. Pat it dry with paper towels before you seal it.This is a tail piece. Pretty even thickness with skin on one side.
Freezing question: freeze it in water like people do other fish? Vacuum seal and freeze dry?
