I kinda just throw it together but here goes
1 cup distilled vinegar
1 cup Franks hot sauce
1/2 cup water
Sugar
Salt
Peppercorns
Red pepper flakes

Pickling spice
Boil these ingredients
When I put the bologna in the jar I layer hot jalapenos and hot chili peppers then more bologna and also red pepper flakes
I honestly don't think you can add too much spice
I apologize for the recipe but I never really measure the amount of dry spices, I just add what I think looks good
I use garlic ring bologna that I get at Yoders (Amish/ Mennonite store)
The garlic ring bologna really makes a difference

For the smoked sausage I boiled everything including the Mazzettis jalapeño and hot chili peppers, then would layer.
I honestly can't tell that much of a difference.

This entry is the super bowl champion of all food entries. Wow. I suggest using the leftover liquid for sauce base for a variety of sauces. Pure genius here folks.
