I have all kinds of recipes, but keep coming back to the simplest.....Just soak it for 3 hours in Dales low sodium steak sauce. Make sure it's the low sodium....not the regular.

Easiest and tastiest

Here is a jerky recipe thats got a lot of black pepper and is a little hot, but very good.
5 tbs soy sauce
2 tbs salt
2 tbs black pepper
1 small onion chopped
2 stalks celery chopped
1 tbs hot sauce of your choice

Combine all ingredients and simmer 10 minutes.
Strain out the solids and discard.
Pour liquid over meat strips and mix to coat meat.
Marinate for 8 hours.
Dry the meat. Many options to dry. In an oven at 125 degrees, use a dehydrator, smoker, etc. Keep the meat at about 125 for 6 to eight hours. Sometime during the drying period, take it up to 160 for about 30 minutes to kill bacteria.
