I always called it poke salad. I guess because, that's what I
always heard it called. I would like to hear some recipes for
"poke salad" if any of you have any.

Up in the Northeast they have a fern called fiddlehead. Similar to poke. I can eat my weight in fiddleheads. But you have to be sure to blanch them first and rinse before you boil them.

Now with poke, I like it in a salad. But I was always to told to do the same with them...boil a minute or so first and pour the water off and rinse well.

Does anyone have a recipe for dandelions? I have had the wine but never eaten the greens.

Here's one I found online that sounds pretty good.

Poke Salad

1 to 2 lbs. Poke Salad

6 to 8 slices bacon

1 lg. onion

2 eggs

Pick and wash poke salad, bring to a rapid boil for 20 minutes. Drain and rinse with cold tepid water. Bring to a rapid boil, starting with cold water, for a second boil for 20 minutes. Again drain and rinse with cold tepid water. Now for the third time, starting over cold tepid water bring to a rapid boil for 20 more minutes. Drain and rinse with cold water. Let drain completely.

Meantime fry bacon and save drippings; set aside. Clean and cut onion in quarters. Take drained poke salad. Cook in fry pan that you fried your bacon. Add 1/4 cup of drippings and shortening from bacon. Add onion, 1/4 cup of water, salt to taste. Let steam fry until onions are sauteed, about 15 to 20 minutes. Serve and garnish with hard boiled egg and bacon.

Bowriter.. here is one of my favorite ones for Dandelions.. give this a try.. bet you will like it also.. and you are right about Fiddleheads.. they are some real good eating there..

1 gal. dandelion
1 lb. smoked sausage
3 small potatoes, cut and diced
2 Tbsp. rice
4 Tbsp. vinegar
1 to 1 1/2 qt. water
1 tsp. salt

1. Wash and cut 1 gallon dandelion greens.
2. Place in bottom of medium size pot.
3. Put 1 pound of sausage, cut in pieces, in pot.
4. Put more dandelion greens on top of sausage.
5. cut and diced potatoes and put on top of greens.
6. sprinkle 2 tablespoons of rice over potatoes.
7. Boil all 40 minutes and add 4 tablespoons of vinegar before serving.

If needed may added more water if it starts to boil dry.

I also make up a batch or two of Dandelion Jelly every year..Man do i LOVE that stuff!!

1 qt. dandelion flowers
1 qt. water
1 tsp. lemon juice
1 box Sure-Jell

1. Cook together for 3 minutes the flowers and water.
2. Strain and save juice.
3. Follow directions on Sure-Jell box using dandelion water.
4. Bring to a boil, then add 4 1/2 cups sugar and lemon juice.
