Called in and killed 3 hens last Monday.
Saved one whole for thanksgiving, cut the breast and legs off the other two.
I froze one bird's breast for later, and took the other and pounded it out and cut it into chicken sized pieces and marinated them for a couple days.
Today I grilled it for the family and also made gravy from turkey stock/broth made from boiling turkey legs. (The boiled legs are smoking right now before I pull the meat and add BBQ sauce for sandwiches)
It turned out great, meat was not tough at all. Looking forward to the pulled turkey leg sammiches, coming soon. This is the first time I will smoke the boiled legs instead of adding liquid smoke to the sauce.
