I have seen some people talking about waiting to plant some fruit trees they picked up until fall. I am coming home for a couple of weeks here the end of July/beginning of Aug and would like to plant some apple, pear, or persimmon trees. Is it worth getting some and putting them in the dirt, or would I be wasting my money trying to do it mid-summer?

I'm not sure it is wasted effort/time, just that you will see much better survival rates if the trees are planted during the dormant season (November through March).
