I stumbled upon this video for "Schichtfleisch", which is a German kind of pulled pork. I've cooked it several times now and it's excellent...my favorite way to cook BBQ roasts now.
Schichtfleisch means "Layered meat"...it's layers of pork and sliced onion. I alternated pork chops with slices of venison roast, and the variety was nice.
If you don't want to fill a cast iron pot with meat and onions and cook that much, you can use a smaller baking dish, layer it horizontally instead of vertically, and cook it in your oven. I've done it both ways and the oven method is almost as good as the campfire Dutch Oven method.
