Its a defective/misfolded protein. It propagates by converting normal proteins into defective/misfolded proteins. I'm not super familiar with the process in which the prior converts these proteins, but apparently more similar to contact/mechanical change in your example than radiation. As the prions accumulate, they prevent normal function of the tissue the proteins form (similar to how cancer destroys functions of organs), in this case nervous system tissue.
