As long as your string doesn't stretch too much, your limbs don't warp, or your timing doesn't change, you'll be be good. My friend left his cocked for almost a full year accidentally and it still shot great.

I unstring mine in the off season. But, that's just me. I also decock my rifles. I've replaced firing pin springs every year in my match rifle and you might be surprised the length difference in old and new springs.
Why leave the limbs under stress in the off season if you don't have to?

It's easy to uncock mine. There is a little lever to switch which allows me to take off the safety and release the trigger with the cocking string held in one hand. My brother has to put a bolt in to release the safety. Then he does the same. Soft easy release.
