chocolate oatmeal drop cookies

i make these from time to time, these are my sons favorite.

2 cups oatmeal
2 cups sugar
1 stick unsalted butter
3 table sp cocoa powder
1/2 cup milk
1/2 cup peanut butter
dash salt
1 teaspoon vanilla

lay out some wax paper on counter about 2 1/2 feet long.

in a pot, mix sugar and cocoa until well mixed. make sure lumps are taken care of. next pour milk in and mix. turn on heat to med to med high and throw in stick of butter and salt. bring to a ROLLING boil. boil for 1 minute. take off heat throw in peanut butter, vanilla and stir until dissolved. pour in oats and mix well, QUICKLY. drop wooden spoon fulls onto wax paper. enjoy.

My girlfriend makes these, they are really good. Easy to make, but don't last long in our house.

PS: She uses super crunchy peanut butter, it adds some extra crunch to the cookies.

oh yeah i forgot to put in directions, KEEP STIRRING it until you take off heat or you will have a burnt mess. also if you dont cook it for 1 minute while at a full boil youll have runny cookies that wont harden. if you cook it too long then your cookies will harden in the pan before you have time to drop them, sorta like chocalat granola.

you can also add 1/2 cup pecans, just use only about 1 1/2 cups oatmeal.
