I must admit most chess pie's I have eaten have just about been too sweet for me and this one is pretty sweet too but it is the absolute best I have ever tasted.
3 eggs
1 1/2 cups sugar
1/2 cup melted margarine
1 tsp. cornmeal
1 tsp. vanilla
1 tsp. vinegar
Mix this by hand, don't use a mixer.
Pour into unbaked pie shell.
Bake @ 350 for 45 to 60 min.
When I first tasted it I asked the lady that made it for me if it was lemon chess pie and she said no.
She adds the vinegar and it gives it a "lemony" flavor.
