I must admit most chess pie's I have eaten have just about been too sweet for me and this one is pretty sweet too but it is the absolute best I have ever tasted.

3 eggs
1 1/2 cups sugar
1/2 cup melted margarine
1 tsp. cornmeal
1 tsp. vanilla
1 tsp. vinegar

Mix this by hand, don't use a mixer.

Pour into unbaked pie shell.

Bake @ 350 for 45 to 60 min.


When I first tasted it I asked the lady that made it for me if it was lemon chess pie and she said no.
She adds the vinegar and it gives it a "lemony" flavor.

Awesome.

Well - that does sound good...however, like most everything; can't eat it unless it tastes like cardboard.

...So, I've altered Ruger's recipe showing what I can eat:

3 eggs cholesterol issues
1 1/2 cups sugar blood sugar issues
1/2 cup melted margarine cholesterol issues
1 tsp. cornmeal have to invest in S.U.R. again
[size] [/size] 1 tsp. vanilla
1 tsp. vinegar


Well, I'll mix those teaspoons of vanilla and vinegar together and get back to you...

Some one made one it is kind of like chess pie but not as sweet ........ they used splenda instead of sugar too for us diabetics ....... never heard of it till that day


it has buttermilk in it too

Ok I googled it and here it is

Ingredients
1 1/2 cups granulated sugar
1 tablespoon flour
1 tablespoon grated lemon zest
4 large eggs
1 cup buttermilk
1 stick butter, melted
1 unbaked 10-inch basic pie crust shell
Directions
Preheat the oven to 350 degrees F. In a large mixing bowl, combine the sugar, flour, and lemon zest. Whisk in the eggs, 1at a time. Stir in the buttermilk and melted butter. Pour the buttermilk mixture into the pie shell and bake until the top is lightly browned and the center sets, about 25 minutes. Remove from the oven and cool to room temperature. Slice the pie into individual servings. Garnish with the whipped cream and mint.
