cheese grits!!!

We're having an outreach event at an RV park today. Fish fry, wings, singing, etc.

Being from south GA I can't have a fish fry without cheese grits, so I made enough to go around.

8 cups whole milk
24 cups water

Bring to boil

8 cups grits

Stir in and cook till consistency of thick soup, stirring constantly.

3 tsp salt of choice, to taste
2 tsp freshly ground black pepper, to taste

Stir in spice, making sure grits don't stick to bottom of pot.

8 cups shredded cheese of choice. I used mild cheddar.

Stir in cheese until all melted.

Cover and let sit @ 20 minutes.

Best served warm from cooking.

Serves @ 50.

Anyone got a favorite cheese grits recipe they'd like to share?

We eat grits with ALL fish and seafood. Bother in law just brought me a good mess of fresh caught black mullet from back home in Fl, iced down and ready to go. Will fry some tonight, with a big pot of grits, and fire up the pit tomorrow and smoke a mess, to make some wicked ass fish dip ;)

Did he get any roe? Man I'd love to get my hands on some yellow mullet roe!!

I can eat cheese grits with anything. Before they get too cold, pour the leftovers into a glass baking dish and throw them in the refrigerator. You can then slice it and fry it up. Redneck polenta.
