Camping Breakfast Fattie

Decided to do two Breakfast Fatties for about 15 of us going camping and canoeing this coming weekend. We will warm it up in boiling water and then eat it on a tortilla with salsa. Quick and easy with very little clean up or trash. Ingredients are....

- 2lbs Jimmy Dean
- 2lbs Bacon
- Fried Potatoes
- Country Ham
- 10 farm fresh eggs
- 6 slices of American Cheese

Short story........Flattened out 1 lb of sausage in a gallon Ziploc for each Fattie. Fried up the taters and the ham. Cooked 5 eggs, 1/2 ham, 1/2 taters and 3 slices of cheese in a ziplock (x2). Wrapped the sausage around the egg omlette and the bacon around the sausage. Twisted in saran wrap to form. Smoked low and slow on the grill to an internal temp of 169 deg. Vacuum sealed and freeze till needed. Pictures tell the rest....

The Breakfast Fattie was a huge hit this weekend. Re-heated in boiling water, crumbled in a tortilla shell when done with cheese, fresh pico de gallo, and some hot peppers to taste. Two fatties made 15 people very happy.......It was hard to get the group motivated after that to go canoeing though!?!

Another neat idea to take camping is that you can premix omelets in ziploc bags (just gotta keep em cold) then pop the bag in boiling water for 13 mins. Once you pop it all out everything is cooked and ready to rock.

From my head down to my legs I LOVE EGGS!!!!

Also even though my Savior was a Jew I don't know if I could have gotten down with the no swine thing. Bacon is such fine eatin. Don't matter if you're dirt poor or Warren Buffet everybody loves bacon!
