Anyone got a good breakfast sausage recipe. All the store bought recipes I have bought sux.Prefer medium or mild mix from scratch. Thanks .

2lbs of ground pork
3 tablespoons of rubbed sage
1/2 tablespoon of crushed red pepper flakes
2 tablespoons of kosher salt
1 tablespoon of black pepper

1. Combine all the spices and mix into the cup of ice water
2. Mix the spices with the ground venison and pork. (Really smoosh and kneed it thoroughly for about 5 minutes to mix it well.)
3. Fry up a sample. If you like it hotter add more pepper to taste.
4. I pack it in freezer paper in 4 oz. portions. You can always thaw a few packs if you need more.
Assuming you use ground pork with a 80/20 fat content, you're looking at approximately 8%-10% +/- total fat content for the finished product. You'll probably need to use oil in your skillet.
I really like this recipe. It is nearly impossible to mess up, is quick, and tons of fun!
