This is what I use when cooking a lot of fish.
Thirty gallon cast iron pot on custom built propane cooker. I have a forty gallon set up too but can't find a pic of it right now.

Bayou classic double burner with two 8 qt cast iron dutch ovens.doesn't cost an arm and a leg for cooking oil. You might need something larger if you're cooking for an army.

I'd hate to have to buy the oil to fill those 30-40 gallon jobs up, 5 gallon of peanut is $40-$50 now or was last time I seen any

Depends on the amount and number of people cooking for. I have an outside propane burner if cooking a lot. I'd just for a few then the cast iron on the stove will do. Medium size group we break out the fry daddy.
