BBQ Sauce

More receipe than you can count on the interweb for bbq sauce. I have made several, but after awhile cost vs how often it is used and how much I have not made any in a while. I pretty much now use sweet baby rays original bbq sauce as a base then doctor it to what I want for heat and spice flavor.

If you think it will taste good together throw it in there spice wise. Test as you mix/cook with some French bread or cracker.

Apple Cider vinegar is an essential ingredient to any BBQ sauce (I tend to like vinegar based sauces) Black Coffee and a Dark Nut Brown Ale are 2 other ingredients I typically use. As a general rule, whatever dry rub you use is a good spice addition to you sauce.

As of now, the only thing I insist on making a sauce for is chicken leg quarters. We got the recipe out of a Weber cook book and maybe it's called "Spice Rubbed Chicken legs with Chipotle Orange BBQ Sauce". As the title suggest, it has a lot of orange juice, some chipotle peppers that come canned with adobo sauce, ketchup, onion, etc. It's some good stuff!

I make a Raspberry BBQ sauce that is great if you like really sweet sauces. Ketchup is the base and I breakdown the raspberries in honey and brown sugar in a saucepan on the stove. I add red wine vinegar, a little mustard powder and a touch of cayenne. It is really good on pork tenderloin

Sounds good. Can you give us some ratios, measurements or approximations?

These are really approximations as I just make it to taste each time. One package of raspberries from produce section, 2 1/2 cups of ketchup (Heinz as there is no other), few tablespoons of honey and few tablespoons of brown sugar, 3 tablespoon of red wine vinegar, 1/4 teaspoon of cayenne and half teaspoon of mustard powder. Basically after I cook down the raspberries in the honey and brown sugar, I just mix everything else together.

Thanks! I'll have to try that.

EDIT: Reminds me of the Blackberry glaze that Chris Lilly has for wings in his Big Bob Gibson's BBQ Book.

BBQ sauce is fun cause there are so many different ways to go. Start with a bottle of your favorite BBQ sauce. Add 1 cup apple cider vinegar (more if you like) 1/2 cup of ketchup. 1 cup of brown sugar. A couple tbsp of worshersire sauce and hot sauce. Then add your spices. I do garlic salt, smoked paprika, black and cayenne pepper, crushed red pepper. For more heat (which I like) I add jalapeño powder and Carolina reaper powder. Combine everything and bring to a boil. Reduce heat and simmer for a few minutes while stirring so everything is combined. I usually make a gallon at a time. Between friends and family it doesn't last long.

Carolina red reaper powder?! You must like it hot. Sounds good though since I'm a bit of a chile head myself. Most folks probably don't realize that many restaurants start with a commercial BBQ sauce base, as well. They sell Cattleman's jug after jug down at Restaurant Depot.

Years ago there was an old man around here that made his own sauce. People would come from miles around to buy it. He would never tell what went in it but it had the typical ingredients but with a coca cola base. It was thin but great.
