Backstrap for dinner

Sprinkled with rosemary, garlic, salt and pepper. Roasted to 130 degrees and let set. Covered in peppers and onions that were lightly fried in a skillet with balsamic vinegar and maple syrup. Potatoes with butter, parmesean cheese and garlic. Then some corn for a side.

After the firs bite I had to eat some of that corn to really get into it. The taters were really good. Roasted them next to the meat on the oven/

Thank goodness for leftovers. Sliced some real thin with cheddar cheese, lettuce, tomato and some of the pepper/onions on toasted wheat bread with mayo. Didn't have time for picture. I was too busy fending off the kids. If I had set it down it would have diapered. { Disappeared}
