Does anyone have a good rescepit that I can try.

Back about 1978 I was working in the Texas Hill Country and we killed about 20 one Friday evening. We skinned/shelled and cleaned them up real good. They have white meat and dark meat like the proverbial chicken. We baked some in the oven sorta turkey style and grilled the rest. 2 kegs of beer and all sorts of other fixins, 30 or so people and we had a dang good time and the dillers were good eatin. A couple of months later was when I found out that they can carry leprosy and haven't touched one with my hands since

My grandmother used to roast them in the oven, but I never got the recipe before she died. She called them "Hoover Hogs".

Able to confirm that about a third of the leprosy cases that arise each year in the United States almost certainly result from contact with infected armadillos.
