Ok guys, I've read the other threads but I'd like to have a SIMPLE breakfast sausage recipe, nothing fancy. I'm going for the plain ol Jimmy Dean flavor. Any help is appreciated!
 
Are you working with already ground meat? Will you require your own fat to add in?

If just plain ground meat, here's where I'd start. Sausage is all about personal taste, so do what you'd like.

2 lbs of lean ground meat
1 lb of pork belly
3 tbsp Kosher salt
2 tsp ground pepper
1 tsp red pepper flakes
2 tsp rubbed sage
1/2 tsp fennel
1 tsp garlic powder
1 tsp onion powder

Mix well and pat into patties�...

Bacon is a cured meat product that will dramatically change the flavor of your sausage. Pork belly is a fatty source of meat that will work well with your base meat. Buying pork belly is easier than buying pork fat. Use un-cured pork belly. If you can't find any, buy fatback to use instead of bacon.
 
Ask the butcher. I get it at Whole Foods in Memphis. It's more expensive, but their meat quality is pretty good. If none of your grocery stores have pork belly, there's likely a meat wholesaler near you that can get some.

My favorite simple sausage casserole recipe is as follows:

Lb of sausage fried loose in the pan.
Drain, and add 1 pkg Philadelphia cream cheese.
Mix in till well distributed.

2 cans of Pillsbury crescent rolls
Place one can of crescent rolls arranged flat
in the bottom of a greased 9x14 baking dish.
Place in oven at 325 for about 5 min
just to get them started baking, then remove from oven
and pour sausage/cream cheese mixture in.
Then place the other crescent rolls over the top
of the mixture and return to the oven for about 25
to 30 min, or until golden brown on top.

This is about the best simple sausage casserole I've ever eaten, got it from a member
here a few years ago.
