I am getting better with my Ahi Tuna, I have a container of dry rub that was given to me at OutBack Rest.

I freeze the Ahi Tuna, once frozen I set it out, let it thaw just enough for the dry rub to stick

cover bottom of skillet with Olive oil and sear on both sides for 30 seconds

place in refrigerator for 3-4 hours then slice

from Paradise Seafoods, they drive up from the coast about once a month, they were in Jackson Wed, Thur and Friday of this week, fresh tuna, grouper, shrimp etc. I will find their email addy and see if they have other monthly locations

I just got off the phone with the owner Ted. They are at the Agricenter in Memphis every week and they are also at the Shelby co-Tipton Co. line today. They have the best seafood. They make some homemade smoked Tuna dip that is real good.

CL, that's the only way ahi tuna should be cooked.

Maybe have some type of different dipping sauces for it.

Local place used to make a ahi burger. They'd chop it up after searing and have some type mayo something that held it together.

After meeting that guy at the Downtown Farmers Market a couple summers ago, I'd buy big-bone buffalo at $30/lb from him at the mouth of Nonconnah Creek. :D

He was about the only redeeming vendor at the DFM....
