Seared Ahi Tuna

I purchase the frozen tuna from Kroger.

The following is what the manager at Outback Steakhouse in Jackson Tn said how they sear the tuna.
Tuna is thawed just enough for their dry rub to stick.
Red hot skillet with Sesame oil.
Seared 30 seconds each side. 15 seconds the edges.
Seared tuna is then placed in refrigerator for about 4 hours to finish thawing.

My question is "The narrow white ring just under the seared surface"
Can anyone sear their tuna and not get the white ring.

Never noticed this.

Admittedly I am a tuna snob. I will not eat tuna from warm water like the northern gulf.

I get a care package of Bluefin Tuna each summer from a good friend who is a guide on Cape Cod. It's the only tuna I eat.

Love seared tuna. Isn't the white ring just the bit of fish that cooks with the searing? The longer you sear, the deeper the white will go. Or is this something else I'm missing?

I don't know. Outback's didn't have the white ring.
I have nailed my own maybe 2 times.
From what I am reading the wider the white ring the tougher it gets.
