I'm a gizzard fan - chicken, turkey, also love the hearts. Liver's ok, just in small "doses" with something spicy or mixed into dressing.
My mother in law used to tenderize liver between layers of cheesecloth, & that took alot of the bad taste out.
I've tried beef tongue several times, first in Costa Rica & a few times since. It is very good, tasty meat - better to chop it up into small cubes.
I'm going to do my best to keep the heart & liver from the next deer I kill, maybe even the tongue.
I've had chitterlings & rooster fries before, both fried. Not going to go out of my way for either - chitterlings have to be really well cleaned & the rooster fries I had just tasted like fried breading.
