Quick and easy...slice like fries, add a little olive oil then dust with some creole seasoning, grill to your personal liking.(I have started grilling mine less and less to reduce the mushiness) Can have ready in fifteen minutes start to finish.

We let some of ours get big. Then dug out the inside to hollow out a "bowl." Then we cut the meat of the squash/zucinni into cubes and cooked with brocolli. Season the inside of your squash bowl with salt and pepper. Add cheese to the cooked brocolli and squash and refill bowl. Cook in oven untill cheese nice and melted. Eat bowl and all.
Thought about doing the same thing with soup but haven't tried it yet. Maybe take hamburger meat, tomatoes , squash , carrotts ect. and fill the squash bowl for a vegtable soup. Or even better a creamy potato and cheese squash soup...
Dude, stir fry it with any thing chinese you like! I use some in small cut sliveres of backstrap and eat with rice, mushrooms venison, etc......Freakin awesome. There are so many ways to use zuchinni in stir fry and it really is good, use olive oil, or sesame oil for that really goood roasted oriental flavor!!
