Zuchini bread french toast

I had a few loaves of zuchini bread in the freezer, I took them out the other day and was having a piece with just some butter on it when the idea hit me............french toast.

Dang, was that some good stuff.

Ok, I added a little twist to the second loaf this morning

2 eggs
2 tsp. vanilla ext
a shake of cinn. & nutmeg
1/4 cup milk

beat together well

cut zuchini bread into 3/4" slices then cube into 1" squares

dump all the cubes into the egg wash and toss gently with a slotted spoon, remove cubes when coated evenly and place is hot skillet

Cook about 2-3 mins. then flip and cook 2-3 more mins. break up contents and toss gently in skillet and cook 2-3 more mins.

remove from skillet, top with butter and maple syrup...................

I'm guessing it would be good with banana bread also! :)

I like to cut some slices thick, put them on a cookie sheet, cover with butter, sugar and cinnamon. Put the oven on broil and leave them till it starts to brown a little and all the butter is melted and the sugar bubbles.

Dodge Man,

I am sure it would be if you like banana bread, I love banana's but don't like the bread.........I know, odd. I don't care for the "tinny" taste of banana bread.
