That sounds like a great idea. But I think I would cook the chorizo first, remove it, then cook the onions. Put the chorizo back with everything else.
 
If it's Spanish chorizo (which it looks to be), it's a dry cured sausage which doesn't even require cooking. If it's Mexican chorizo, I agree with you. I'm not a fan of Mexican chorizo though…too greasy and i don't care for the flavor.
