So after the shame of eating Tyson Wings the other day, I decided to prove that I can actually make a decent chicken wing! I coated them in Buffalo Wild Wing's "Asian Zing" which is my favorite wing sauce.

I started out buying fresh chicken wings for certain. Then I split them, and tried to get them as dry as possible with a paper towel. Then I salted them and put them on a wire rack. I think I put baking powder on them too, but I don't recall. I let them sit in the fridge overnight to further get the moisture out of them.

The next step is baking them to 165 degrees at least. After that THEN I fry them so I get a golden brown wing with crispy skin. Needless to say they were all devoured. I gave my wife all of the flats, since she doesn't like the drumettes.
