I am going hog hunting over the holidays and think I might want to smoke a whole hog. Any advice?

My concern is that I will only have the ability to skin it and I don't know exactly how much it will weigh. I will try to shoot a pig between 60-120lbs, but who know what if anything will come out.

Just want some thoughts.

I haven't done a wild hog but when we do whole hog we just scrape the hair and leave the skin on. Split the hog. Inject every bit you can get to then apply rub to the inside only. No need to put rub on the skin.

What kind of smoker or pit will you be using?
 
I have smoked lots of wild hog, never in a whole format though. I always quartered mine. A simple brine of beer & salt for 12 hours, then season before going on the pit. I am also against injection personally, but know lots of guys that do it, and love it. To each their own.
 
I've roasted a few whole hog's and been to many a pig roast,It's pretty much a family tradition in La..Depending on how you learned growing up and or what you have on hand there are several methods.U Definitely want to leave the hide on the pig if you're doing the whole thing.Keeps the juices in a lot better flavor It's a little bit of a chore to get the hair off a big pig.You can scald the hair off by dipping or pouring scalding hot water over the pig. I've used a barrel cut in half length wise,or a big metal tub like a water trough ,a old metal bath tub works real good.Fill it about 1/2 way with scalding water.put a couple of straps or ropes under the pig and lower it into the water.They will help turn it without getting burned. Keep a BIG pot of handy to add as your working to keep it hot. You need a good stiff wire brush to scrap the hair off.Use the straps to turn it over as your scraping.3 or 4 guys can do a Big Hog in a hour or less. If you have a small pig a little propane torch will work to just burn the hair off with only a little scraping..You can burn the hair off a big one with a bigger torch that hooks to a 20 gal. propane tank. I've never buried one in the ground. We either hang one above hot coals or put them spread eagle over a pit.Wrap it tight with fence wire to flip it .
