OK,so yesterday I did my 2nd whole hog the same way as before.I have a grillbillies roaster and cooked if belly down for around 7 1/2 hours at 280/300 degrees until the hams were 190 degrees.I injected it with apple juice quite a bit.The skin isn't edible with this method but the meat all over the pig is absolutely perfect using this method.I uses c$F meats in Williamson county.Just a heads up if you want to have a big party its a lot of fun.The reason the skin isn't good is cause I rub it down with oil and it turns black,I think it helps with the cooking process. After the pig comes off the roaster,I wrap it with several layers of tinfoil all over and let it sit for a few hours until the guests arrive.Rib bones pull out clean as well as all the other bones and its moist and delicious.
