OK,so yesterday I did my 2nd whole hog the same way as before.I have a grillbillies roaster and cooked if belly down for around 7 1/2 hours at 280/300 degrees until the hams were 190 degrees.I injected it with apple juice quite a bit.The skin isn't edible with this method but the meat all over the pig is absolutely perfect using this method.I uses c$F meats in Williamson county.Just a heads up if you want to have a big party its a lot of fun.The reason the skin isn't good is cause I rub it down with oil and it turns black,I think it helps with the cooking process.After the pig comes off the roaster,I wrap it with several layers of tinfoil all over and let it sit for a few hours until the guests arrive.Rib bones pull out clean as well as all the other bones and its moist and delicious.

About $360,its really easy if you don't stress out about it and realize that the rest of it wont ruin if you take it off once the hams reach 190.Peel the skin back and juice runs out if you inject enough.We had lots to freeze left over.
 
Absolutely love smoking whole hog. Best bbq you can get... Got to save the skin though its fantastic.

No, a lot of people do but it will turn your skin black most of the time. I wet the skin down with sometimes vinegar and sometimes my spritz of white vinegar, apple juice, and sriracha sauce (Any would work but I could drink this stuff). Liberally sprinkle on some kosher or sea salt and put it on the smoke. Will usually come out with a good color but will always be good. If your not already, try smoking one with the head on. I call dibs on ears as soon as we buy the hog.
