RIP. just showed a couple of guys our open whole pig pit last week and it got me all fired up to do one before summer set in. sad to see legends go...
 
i love whole hog bbq. seems hard to find in these parts. have had it a few times in LA- lower alabama (mobile area)
 
this place is run by a black family. all of em big enough to sale shade- nice as they can be and they whole hog every friday and saturday. bring it out chop it up, add the sauce and spices right in front of you. i will look up the name.

My family used to cook a whole hog every 4th of July. It's a lot of work sitting up all night and tending a fire. Loads of fun though. I'm gonna build a pit at my river house when I retire up there next year and cook a whole hog at least once a year for friends and family...maybe a goat too, who knows. :D :D
 
I know a few people up in that area that cook whole hog occasionally. Its a tradition that has been passed down but slowly dying away.

Hopefully someone will continue Scott's legacy. Scott's has been my favorite BBQ joint since the early 60's when it was just a shack that cooked for sales on Friday and Saturday. When they ran out it was wait till next week. Old man Scott bought up a cache of surplus potatoe chip bags to use rather than brown ones. Everyone knew it was Scott's without asking by those chip bags.
 
Got a wild sow(120lbs) in my pen that I have been pouring feed too all turkey season. 2 more weeks on Florida citrus and she is going in the ground ;)

That is the coolest thing about pigs. They eat roots, grain, grass, slop...pretty much anything. Then they turn it into BACON.
