White Chili
1tbs olive oil
2 medium onions chopped
1 tbs garlic chopped
3 15 1/2oz cans white beans (Lucks)
2lbs cooked chicken,cubed (I like to grill mine)
2 4oz cans chopped green chilies
2tsp ground cumin
1/2 tsp ground cayenne pepper
2 cups chicken stock (approximately)
Heat oil in heavy pan and add onions and garlic stirring until soft. Add all remaining ingredients and stir to blend. Bring to boil, and the reduce heat and reduce to simmer for 20min.
Serve with grated Monterey Jack cheese ( about 1/8 cup )and salsa about 1 TBS) when in bowl for serving.Serve with heated or toasted Tortillas. Enjoy
