White beans?

Had some goooood white beans last year down in Baton Rouge.

Anybody have some good spicy white bean recipes?
 
using dried beans.... Peel a medium sized white potato and place with dried beans in bowl. soak overnight in uncovered bowl with plenty of water. (this step can be skipped, but it is better for the beans to slowly absorb the water rather than using the microwave method)

Crock pot on high, add potato and beans, enough water to cover with a couple inches to spare, salt and pepper to taste, 1 T of crushed red pepper, 1 t of crushed garlic, 1 sm/md onion - chopped, 1 and half cups chopped ham or one big slice of country ham/chopped, and 1/4c. chopped red roasted peppers.
Finally add one small can of chicken broth to the pot.
Cook almost all day, making sure there is enough liquid covering the beans. Check doneness by mashing a bean to the side of pot.
Close to end of cooking cycle, remove lid, allow liquid to cook down after adding 2T butter. Serve with hot cornbread and diced tomatos. My way: use a ceral bowl, put hot cornbread in the bottom, a layer of beans on top, then a layer of cool diced tomatoes and chopped onion. a meal all in one container, minus the iced tea of course!

OK I am cooking impaired so... why the one white potato?

sorry didn't check bad. But I see you found the 'potato theory'.
also, the potato adds a bit of substance to the bean juice, IMO

LAMAN, You just need to eat the dang tater! :D

Actually if you eat that tater, you will think you ATE ALL the beans guys!
 
Well I cooked it like you said, minus the tater as I was fishing with my partner that next morning, and they were mighty tasty
