White Bean Chicken Chili

I made this for supper last night and thought I'd share it here. I ran across the recipe probably 10 years ago and I make it pretty regular in the cold months. Calling it chili is a bit of a stretch…more like an Italian chicken and bean soup…but it's good eating nonetheless. I use diced chicken breast instead of ground and baby spinach instead of chard. I've also used diced wild turkey breast and it works fine but a little tougher than chicken.

My wife makes something almost identical to this except she adds a block of habenero jack cheese. We all love it. She won a chili contest at church some time back. It's so good.
I always tease her and tell her that it's bean soup. Best "been soup" I've ever had. It's excellent.

I 100% agree. We make it often, but I can't call it chili. I have to call it white chicken chowder.

I usually make this once every winter, probably never exactly the same way twice. My wife made it this year and it was really good.
