Onions suatee'd in butter

Sometimes a dash of Worchestershire sauce in the cooking butter.

Heat the butter, sautee onions and remove, add a little more butter, place venison and sear for a few mins. each side, remove and serve with onions

Rub well with olive oil and lightly sprinkle Tony Chachere Cajon seasoning. I can't emphasize "lightly" enough. It is a powerfull seasoning and must be used lightly or it will overpower the dish.

Either Chachere or Montreal Seasoning if I go the commercial route.

Otherwise it's kosher salt, fresh ground pepper (I've got a coffee grinder set aside specifically for making large amounts of ground pepper) and sometimes butter. Homemade herbed butter tops off any steak nicely.

The biggest injury I've ever suffered to my venison cooking experience was being told to soak it in Italian dressing overnight and actually doing it. I can't stand that now.
