With all these main course dishes, what's for dessert? My sweet tooth is as big as Texas. Made a chocolate croissant bread pudding couple of weeks ago that rocked. 6 choc croissants, 6 plain, used chocolate from olive and sinclair here in Nashville (they make it all here in town, even roast the beans here), added the standard custard and it moved walls. Or should I say, moved a notch on my belt.

These are pretty good and you can fool yourself into thinking they're good for you because of the oatmeal!

4-cups quick-cooking oats
1-cup brown sugar
1-cup chopped salted peanuts
1-cup semisweet chocolate chips
3/4-cup melted butter
2/3-cup honey
1-teaspoon vanilla extract

In a large bowl, combine the oats, brown sugar, peanuts and chocolate chips. Stir in the butter, honey and vanilla until it's combined. Press into a greased parchment paper lined cookie sheet.
Bake at 350-degrees for 15-20 minutes. Cool for 15-minutes then cut into squares.
