I am a knife fanatic. I have hundreds of them, mostly hunting knives. Gut zippers, heavy tanged models, boning knives, antler handles, folding, straight blade, curved blade, the list goes on.

A couple years ago I started using a knife called Z Blade, best thing I ever did. Yes they are disposable, but my gawd, if you dont want something cut, dont touch it with this blade. Its basically a scalpel, razor freaking sharp. I get 2-3 deer per knife out of one.

They are hard to find, but I just looked them up for a buddy.

I just use a $15 kershaw 3160 for skinning, gutting, and butchering. yeah it's simple but it seems to work for me. I keep it shaving sharp
 
I use a custom knife a friend of mine made me back when I was a teenager, carry it in my Fanny pack and do all my field dressing and some skinning with it. Not a big knife with about 3 1/2 inch blade, Its got an antler handle from a deer I killed, super German steel that will hold an edge better than anything else I have. I also use deboning knives especially if I have more than 1 at a time to skin.
As for the Scalpel knives, I saw them on display at Bass pro earlier this week, seems like a good idea for light work like skinning.
 
I use an older model Buck Cross-Lock. I have two of them. I broke the tip on one when I accidentally ran over it (don't ask) Wife bought me a newer model a couple years ago but I didn't like the thin handles, so I took the blades out and put them in the old Cross-Lock frame. One knive... two blades... three uses. Can not be beat in my book!

Whatever one I've got or if I forgot a knife I use whatever someone will loan me. I would like to try a Havalon but probably won't spend the money on one this year.
 
I use a WW2 K-Bar that a friend of mine gave me when I was 14. He was a Marine in the South Pacific campaigns. I befriended him when I was about ten. He had no kids or other living relatives. He was a great influence on me. He died when I was 20. I use it and think of him.
 
I use a Buck Alpha Hunter, full tang, rosewood handle, 3 3/4 " blade with gut hook. I skin and butcher the whole deer with that one knife. I also have a Buck Goliath, folding knife. Hell of a blade.
 
I've used a small bird and trout that I made myself from barstock to field dress. Currently I'm using the Swing Blade from Outdoor Edge and really like it. It's held an edge very well and the zipper works just like their videos show.

For skinning/butchering I use a couple of the Becker "Tweener" series, the BK15 and the BK17. I also use an old fillet knife for boning. I am looking for a knife with a bit more of a belly for skinning but this setup worked great for 2 deer last year.

Yep!! Got a sling blaze and the gutting blade is excellent. Both blades are tough and hold a sharp edge for a while.

I have the same alpha hunter as well. Is yours one of the newer ones with the softer metal? The one I have is the older with the harder steel. Harder to sharpen but I love it.
 
I use an Olsen OK, HC bonehandled knife along with a shorter version to field dress...I've used Olsens forever...still got the first one I ever owned, bought it from Coho Bob in Pentwater, Michigan
